Rhubarb Recipes

Spicy Rhubarb Cake

  • 1/3 cup – Boiling Water

  • 2 cups – Chopped Rhubarb

  • 2 cups – All Purpose Flour

  • 1 1/2 cups – Sugar

  • 1 1/4 tsp – Baking Soda

  • 1 tsp – Salt

  • 1 tsp – Ground Cinnamon

  • 1 tsp – Ground Nutmeg

  • 1 tsp – Ground Cloves

  • 1/2 cup – Vegetable Oil

  • 3 – Eggs

  • 1 tsp – Vanilla Extract

  • 1 cup – Chopped Nuts
     

Pour boiling water on rhubarb in large mixing bowl. Grease and flour 13″x19″x2″ pan. Beat rhubarb and remaining ingredients on low speed, 1 minute, then beat on medium speed, 2 minutes. Pour into pan. Bake at 350 degrees 45-50 minutes; cool and frost with favorite frosting.
