Rhubarb Recipes
Spicy Rhubarb Cake

1/3 cup – Boiling Water

2 cups – Chopped Rhubarb

2 cups – All Purpose Flour

1 1/2 cups – Sugar

1 1/4 tsp – Baking Soda

1 tsp – Salt
-
1 tsp – Ground Cinnamon

1 tsp – Ground Nutmeg

1 tsp – Ground Cloves

1/2 cup – Vegetable Oil
-
3 – Eggs
-
1 tsp – Vanilla Extract

1 cup – Chopped Nuts
Pour boiling water on rhubarb in large mixing bowl. Grease and flour 13″x19″x2″ pan. Beat rhubarb and remaining ingredients on low speed, 1 minute, then beat on medium speed, 2 minutes. Pour into pan. Bake at 350 degrees 45-50 minutes; cool and frost with favorite frosting.
